Sprecher Cream Soda Mix

Recently splurged on a jug of Sprecher’s Cream Soda mix and made a keg of it.  Lo and behold it tastes just like the real thing.  But for the money I think I’ll stick to Gnome or Rainbow concentrates for future batches.

Rainbow Cream Soda

Made and kegged a two-gallon batch of Rainbow’s Cream Soda and it’s pretty good.  Heavy vanilla and honey up front but there’s a small woody/anise thing around the edges mixing it up a bit.  Also at the end is an unexpected ginger bite.  Not bad for $6.

Sarsaparilla Soda

Made 6 liters (a Tap-A-Draft’s woth) of Rainbow’s “Old Fashioned” Sarsaparilla Soda today after brewing.  I already had the sanitizer mixed up so why not.  I used the ingredient ratios recommended in the instructions and the uncarbonated soda tastes pretty good.  There’s a good vanilla kick alongside a strong spicy, barky sarsaparilla element.

Root Beer

I made my first batch of root beer today. For 7L I used:

  • 3cups cane sugar
  • 2oz sarsaparilla
  • 0.8oz wintergreen leaves
  • 0.25oz licorice root
  • 0.5cups honey (added at end of boil)
  • 2T molasses
  • 0.25t nutmeg

The recipe is a simplified version of this person’s. I boiled for about 45 minutes, cooled, and pitched a little less than a quarter teaspoon of champagne yeast. It tastes pretty good, but perhaps too sweet. Next time I might tone down the cane sugar and bump up the licorice. The sarsaparilla tastes and smells absolutely wonderful! I sourced the licorice, wintergreen & sarsaparilla from Northern Brewer.

Ginger Ale – Now With Lime!

Taking an established beverage and adding lime flavor is a popular trend so I decided to follow suit with my ginger ale recipe. In a 6L batch I added the zest of two limes as well as the juice of 1.5 of them (the other 0.5 went into another recipe). Additionally I bumped up the ginger ratio to 3.9 oz/gal (I used 6.1 ounces of peeled root). The batch has a good ginger heat and the lime flavoring is very nice. It’s not as strong as a 7-UP might have, it just provides a nice compliment to the potent ginger flavor.
